Chicken Castilla Recipe

1 c finely chopped onion
1 clove garlic minced
1/2 c chopped green pepper
1.5 c chopped tomatoes (if canned, drain)
2 T chopped green parsley
2 c chicken broth
salt and pepper to taste
3 c cooked chicken
Tabasco sauce
1 c blanched almonds
1/4 c raisins
1 c white wine or cooking sherry

Directions:
Directions:
Saute onions, garlic and green peppers in butter or oil until wilted. Add tomatoes, stir frequently. Add parsley, raisins, broth and wine. Season with salt and pepper and simmer. Add chicken and Tabasco sauce to taste and simmer. Stir in almonds just before serving. Serve over rice.
