1 c yellow corn meal
1 c milk
1/2 c oil
2 eggs beaten
1 lb ground beef browned and drained
1 lb shredded cheese
1/2 tsp soda
1 can cream style corn
3/4 tsp salt
1 lrg onion, chopped
jalapeno peppers chopped (optional)

Directions:
Directions:
Preheat oven 350º
Combine corn meal, milk, soda, oil, eggs and salt. Mix well. Set aside. Brown beef, onions and jalapenos and drain. Pour half of cornbread mixture into bottom of casserole dish. Pour beef mixture onto cornmeal mixture. Sprinkle with cheese. Top with remaining cornmeal mixture. Bake 40-50 mins
