6 T margarine, melted
1 small onion, chopped
1 c. parboiled (e.g., Uncle Ben's converted) rice
2 c. boiling water
3 bouillon cubes (chicken or beef, depending on your main dish)

Directions:
Directions:
Preheat oven to 350ºF. Dissolve bouillon cubes in boiling water. Cook onion and rice in melted margarine for ten minutes over low heat. Place rice mixture in 1.5 quart casserole with lid. Stir bouillon into rice mixture just before placing in oven. Cover and bake 45 minutes. Stir rice and serve.

Note: You may add chopped mushrooms to rice at the same time bouillon is added.
