Shells: 2 tbsp. sugar, 6 tbsp red wine, 4 c. flour, 1 egg, pinch salt, 3 tbsp. olive oil.
Filling: 1 lb. dry ricotta, 4 tbsp. sugar, pieces of semi-sweet chocolate, 1 tbsp. chopped candied orange peel, 1 tbsp. chopped citron, vanilla, cinnamon.

Shells: Knead dough ingredients until it is shiny and hard. Set aside in refrigerator for at least 6 hours. Roll dough not too thin and cut round discs. Roll around cannoli tubes and fry in hot oil until golden brown. Remove from tube and let cool.
Filling: Mix ricotta with sugar and other ingredients. Fill cannoli shells right before serving.
