Pastry: 1/2 lb. margarine, 4 c. flour, 1 tsp. baking powder, 3 eggs, 1/2 tsp. salt if use unsalted butter instead of margarine, cold water.
Filling: 3 lbs. ricotta, 6 eggs, 12 oz. packaged mild provolone cut into small cubes, 12 oz. packaged boiled ham cut into small cubes, 2 oz. grated Parmesan cheese.

Dough: Mix flour and baking powder together. Cut margarine into the flour until well blended. Make a well in center and break in the 3 eggs. Mix together to form dough. A small amount of cold water will be needed to hold dough together. It can be gently kneaded. Refrigerate.
Filling: Drain the ricotta in cheesecloth overnight to remove excess water. Place ricotta in bowl, add eggs, grated cheese, ham and provolone, salt and pepper and mix well. Line a 10 by 15 inch jelly roll pan with a sheet of rolled out dough. Pour ricotta mixture into pan and cover with another layer of pastry. Seal edges and prick surface with a fork. Bake in 350º for about 50 minutes or until crust is browned and toothpick inserted in center comes out dry.
This may be eaten warm or cold. It freezes well-wrapped if cut in half. Remove from freezer, defrost on counter and re-heat unwrapped on baking sheet till warm.
