Cream: 8 egg yolks, 8 tbsp. corn starch, 1 quart milk, 8 oz. sugar, 1 tsp. cinnamon or lemon peel.
Pastry (2 pies): 3 whole eggs, 3 egg yolks, 1/4 c. butter, 10 oz. sugar, 2 tbsp. vanilla, flour as needed (3 to 4 cups) OR use the pasta frolla dough.
1 jar sour cherry preserves or amarene.

Cream: Beat egg yolks, add sugar, mix well. Add milk and cornstarch. Mix well. Then strain the entire mixture through a fine cloth into the top pan of a double boiler over medium-low heat. Stir constantly in the same direction until thickened. Cool.
Pastry: Place sugar, eggs, butter and vanilla in a large bowl. Mix well. Add flour and keep mixing until dough comes together. Set it aside.
Pies: Roll dough to fit lightly greased Pyrex pie pans. Place cherry preserve on top of the bottom layer of pastry. Place the cream ion top of the preserves. Cover and seal with a top crust. Bake at 375º until top is well-browned. Cool.
