1 large cauliflower (trimmed, cut into bite-size pieces and washed with water still on)
16 garlic cloves, peeled and lightly crushed
1-2 tsp. minced fresh rosemary
1 tsp. salt
1/4-1/2 tsp. black pepper
1/4 c. olive oil, adding more to taste
Shredded fresh parmesan cheese (optional)
More olive oil to drizzle if wanted

Preheat oven to 450º
1. Mix oil, rosemary, salt pepper and garlic together
2. Toss in cauliflower and place in one layer in large casserole dish.
3. Roast in preheated oven for 20 minutes. (Optional: Sprinkle with parmesan cheese) Give it a stir and bake for 10 more minutes.
