1 c. shortening
1 c. granulated sugar
2 eggs
1/2 c. cold water
2 tsp. soda
1 c. molasses
1 tsp. ginger
1 tsp. cinnamon
1 tsp. salt
Flour - more than 4 cups

Directions:
Directions:
Cream shortening; add sugar gradually; then slightly beaten eggs. Beat until well blended. In a large bowl, combine water, soda and molasses. Beat vigorously. ( A big bowl is necessary because the mixture rises with the soda and beating.) Add molasses mixture to shortening mixture and blend. Sift dry ingredients with 3 cups flour and stir into dough. Add just enough additional flour to make dough just firm enough to roll out. Dough can be turned onto a floured board and kneaded with additional flour until smooth, firm and soft. Chill overnight and roll to about 1/8' to 1/4' thick and cut. Bake at 350º for about 7 minutes.
