1/2 tsp. dried oregano, 3/4 tsp. salt, 2 tsp. sugar, 1 c. Italian tomatoes (l lb. 1 oz. can), 2 T olive oil, 1/2 c. chopped onion, 1 clove crushed garlic, 1/4 tsp. basil, 1/4 tsp. pepper.For chicken: 1 lb. chicken, 2 eggs beaten, 1 c. dried bread crumbs, 1/2 c. olive oil, 8 oz. mozzarrella (sliced) 1/4 c. grated parmesan.

Saute onion & garlic in olive oil, add rest of ingredients and simmer for 10 minutes.Dip chicken in eggs and bread crumbs. Cook chicken in half of olive oil until golden brown. Place chicken in baking dish and 1/2 tomato sauce, 1/2 cheeses, repeat one more time. Cover with foil & bake at 350 degrees for 30 minutes.
