2 full racks baby back pork ribs, split into 3 sections each
6 oz. hoisin sauce
2 tbsp. minced fresh ginger
1/2 cup maraschino cherries
1/2 cup rice wine vinegar
water to cover
4 scallions, chopped

Directions:
Directions:
Combine ribs, hoisin sauce, ginger, cherries, vinegar and water in crock-pot. Cover; cook on low 6 to 7 hours on high 3 to 3 1/2 hours. Remove ribs. To thicken sauce, heat, uncovered, until consistency of barbecue sauce. Or pour sauce into saucepan; cook to thicken to desired consistency. Sprinkle ribs with scallions. Serve ribs with extra sauce.
