7 T butter
1/2 C brown sugar
2 C pecan pieces
Pinch of salt
Pinch of cayenne pepper
Pinch ground nutmeg
1 lb. semi-sweet chocolate cut in pieces
1 lb. milk chocolate, cut in pieces
1 lb. white chocolate, cut in pieces
2 C dried cherries, rehydrated & chopped

Directions:
1. Preheat oven to 400 degrees.

2. In a large sauté pan, melt 4 T of butter. Add brown sugar & stir until sugar dissolves & is bubbly.

3. Add pecans. Season with salt, cayenne, nutmeg, & cinnamon. Continue to cook, stirring constantly, until sugar starts to caramelize & coat pecans evenly. Cook for approximately 4 minutes.

4. Remove pan from heat & spread pecans over a parchment lined baking sheet.

5. Place pan in oven & roast pecans for approximately 6 minutes.

6. Fill 3 small saucepans halfway up the pan; then reduce to simmer.

7. In 3 separate mixing bowls, add each type of chocolate into individual bowls. Place bowls over saucepans. After about 2 minutes over the heat, the chocolate will start to melt. Stir each chocolate until totally melted.

8. Remove chocolate bowls from heat & stir 1 T of butter into each bowl of chocolate. Pour each type of chocolate over the parchment paper-lined baking sheet (or onto a slab of marble).

9. Sprinkle pecans & cherries over chocolates.

10. Using a metal spatula, spread mixture out evenly back & forth to about 1/4 inch thick. Either place pan in refrigerator or allow to sit on counter until set, about a couple of hours.

11. Break bark into medium pieces & serve.
