2 c. sushi rice
3 c. water
1/2 c. sugar
1/2 c. rice vinegar
2 sliced avocados
1 c. crushed French fried onions
1/4 c. spicy mayo (from sushi store)
1/4 c. sweet sauce (from sushi store)

Kani Topping:
1 16 oz. pkg. kani, defrosted
2 T. mayo
salt & pepper

Veg. Topping:
1 carrot, julienned
1 cucumber, julienned
1/4 mango, julienned
2 T. spicy mayo

Directions:
Directions:
Combine rice, water, sugar and rice vinegar inn a pot with a tight- fitting lid and bring to a boil. Stir once, cover with lid again and lower flame. Simmer for 15 min. Remove from heat and let stand covered for 10 min. Fluff with a fork. Allow rice to cool. Put outer rim of a 9 in. springform pan on a plate. Fill with rice and flatten. Put sliced avocado on rice and top with either topping.

Kani topping:
Combine kani with mayo, salt & pepper and blend with stick blender or shred kani by hand and mix with mayo, salt and pepper.

Veg. topping:
Mix veg. with spicy mayo and put on top of avocado.

Put crushed French fried onions over topping and drizzle with sauces.
