1 (10 lb.) prime rib roast
10 cloves of garlic
2 tbsp. olive oil
2 tbsp. salt
2 tbsp. ground black pepper
2 tbsp. dried thyme

Directions:
Directions:
Place meat in a large roasting pan with the fatty side up. In a small bowl , mix together the garlic, oil, salt, pepper and thyme. Spread mixture over fatty layer of roast. Allow roast to sit out until it reaches room temperature, no longer than 1 hour. Preheat oven to 500º, place roaster in middle of oven and bake roast for 20 minutes, then reduce heat to 350º for an additional 60-75 minutes, (internal temp of roast should read 135º) for medium rare. Remove to stove top or counter and allow roast to stand for 10-15 minutes so meat can retain its juices. Carve and serve.
