3 cups milk
1 cup light cream
1/2 cup rice
3 eggs separated
1/2 cup brown sugar
1 tsp. vanilla
1 tsp. salt
1/2 cup raisins if you want
nutmeg

Directions:
Directions:
Put milk & cream in the top of double boiler over hot water.
Stir in rice cook until creamy - about 1 hour or 1 1/4 hours.
Stir occasionally.
Remove from heat,
Beat egg yolks add sugar and vanilla and salt.
Slowly stir into hot rice.
Beat egg whites and fold in.
Pour into baking dish.
Bake 350º for 45 minutes or more - test with knife.
