For 2 servings:

2 ounces butter
2 ounces all-purpose flour (a rounded half cup)
1 quart heavy cream
1/2 cup Romano cheese (plus extra for garnish)
salt and pepper to taste
14 ounces sliced roasted turkey breast
2 slices Texas Toast (crust removed)
4 slices crisp bacon
2 sliced Roma tomatoes
Paprika, parsley

Directions:

In a large saucepan, melt the butter and whisk in the flour to make a roux. Cook two minutes, stirring constantly. Whisk in cream and heat, stirring, to simmer, about 2-3 minutes. Remove from heat and whisk in the cheese to make a Mornay Sauce. Add salt and pepper to taste.

In each of 2 oven-safe plates, place one slice of toast, then half the turkey, then slices of tomato. Cover with half the Mornay Sauce. Sprinkle with additional cheese. Run the dishes under the broiler until the cheese is beginning to brown. Remove and cross each dish with slices of bacon. Top with chopped parsley and sprinkle with paprika. Serve immediately.
