Ingredients: 1 Cup Butter 1/2 Cup Sugar 1/2 Cup Dark Corn syrup 2 Eggs, Separate out yolks 2 1/2 Cups Flour
Pecan Filling 1/2 Cup 10-x Sugar 1/4 cup Butter 3 Tablespoons Dark Corn syrup 1/2 Cup Pecans, Chopped

Directions:Cookie Dough 1. Cream sugar and butter on low speed of mixer 2. add corn syrup and egg Yolks 3. Beat until blended well 4. Stir in flour gradually 5. chill several hours
Pecan filling 1. Combine sugar, butter and corn syrup in saucepan 2. Stir to blend 3. Cook over medium heat, stirring occasionally until mixture reaches full boil 4. Remove from heat 5. Stir in pecans 6. Chill
BAKING OF COOKIES 1. Beat Egg Whites slightly 2. using 1 Tablespoon of dough for each cookie, roll into balls 3. Brush lightly with egg white 4. Place on greased cookie sheet leaving a 2 inch space between each cookie 5. Bake at 375' for 5 minutes, remove from oven 6. Roll 1/2 teaspoon of chilled pecan mixture into a call and firmly pres into the center of each cookie 7. Return to the oven 8. Bake 5 minutes longer or until lightly browned 9. Cool 5 minutes on cookie sheet |
