2 eggs
3/4 cup sugar
1/3 cup unsifted flour
1/4 teaspoon baking powder
dash salt
1 Tablespoon butter or margarine, melted and cooled
1 teaspoon vanilla
2 2/3 cups flaked coconut
1/4 teaspoon ground cinnamon
1/2 teaspoon grated lemon peel

1. preheat oven to 325. Lightly grease and flour two cookie sheet
2. in small bowl of electric mixer beat eggs until foamy. Gradually add sugar,
beating until thick and lemon colored about 5 minutes
3. fold in flour, baking powder and salt then add butter, vanilla and coconut; mix well
4. divide batter in half. add cinnamon to one half, lemon peel to the other. Drop by
teaspoons onto prepared cookie sheet
5. bake 12 to 15 minutes or until edges are golden. let stand a few seconds; remove
from sheets to rack
6. if desired, before baking decorate with pecan halves or red or green candied
cherry halves
7. make 3 dozen
