2/3 cup margarine
1 cup cooked mashed sweet potatoes
4 eggs, separate out yolks
cocoa
3 teaspoons baking powder
1/2 teaspoon baking soda
3/4 cup skim milk
1/2 cup raisin
18 small pecans chopped
Directions:
Directions:
1. cream margarine, add sweet potatoes, beat in egg yolks and vanilla
2. mix dry ingredients together and add to creamed mixture alternately with milk
3. mix 1/2 cup of flour with raisins and nuts then add to mixture
4. beat egg whites until stiff and fold carefully into mixture
5. bake in greased and floured 9x13 pan at 350 for 40-50 minutes
