8 Medium Potatoes Diced
5 Slices Bacon
1/4 Cup Margarine
1 Cup Chopped Celery
1 1/2 Cups Chopped Onions
1 Can Cream of Potato Soup
2 Cups 8 oz. Shredded Cheese
Water or Additional Milk
Salt & Pepper

Directions:
Directions:
Dice the potatoes,celery and onions put in a large pot, boil them in water until tender. Drain, Set Aside.
In a skillet cook the bacon until crisp. Drain off about half of the fat. .
Add the soup, and 2/3 quart heavy cream. Simmer, stirring constantly for about 8 minutes. Add milk or water to maintain the proper consistency. Serve in bowl with bacon/celery/cheese and onions sprinkled over top.
