1 c. Mayo
2 Small Pickles Finely Diced
1 Tbls. Chopped Chive
1 Tbls. Parsley
1 Tsp. Tarragon
1 Tbls. Minced Caper
1/2 Roasted Red Bell Pepper, Peeled and Pureed
Cajun Seasoning

Directions:
Directions:
Stir until blended, mayo, pickles, chives, parsley, tarragon, caper and red bell pepper. Dust lamb with Cajun seasoning. Pan blacken lamb until medium rare. Medallion carve. Set against a generous dollop of chilled sauce. Garnish with herbs.
