1 chicken thigh
1 1/2 tbsp. soy sauce
1 1/2 tbsp. mirin
1 1/2 tbsp. sake
1 1/2 tbsp. sugar
Okura for garnish

Directions:
Directions:
Pierce the skin side of the chicken with a fork and cook directly in a pan without seasoning. First cook the skin side until the skin is browned and then turn the chicken over to cook the other side. Make sure to wipe the grease off with a paper towel.
Combine soy sauce, mirin, sake and sugar in small bowl to make teriyaki sauce.
Once the chicken is well cooked (about 80%) pour the teriyaki sauce into the frying pan. Turn down the heat to low and simmer until the sauce becomes thick and has a shiny look. When the sauce is thickened and is no longer left in the frying pan, it is ready to be served. Garnish with boiled okura.

Teriyaki is one of the most popular dishes, best served with steamed white rice. You can either cook using the grill or the frying pan, but for this time, I am going to introduce you to the recipe using the frying pan.
