1 lb. dry black-eyed peas
4-5 slices bacon, cut into 1 inch pieces
1/4 cup butter
1 -2 ham hocks
Bay leaves
1 tsp. salt
3/4 tsp. pepper
1-3 hot chili peppers, diced ( the ones that come in a jar)
1/4 cup dehydrated onion
1 tsp. minced garlic

Soak beans overnight or do quick soak (boil for 2 minutes and let sit one hour) in the morning. Fry bacon in large pot. Add butter and cook until melted. Add 6 cups water, drained black-eyed peas, ham hocks, bay leaves, salt, pepper, dehydrated onion, chili peppers and garlic. Boil for 10 minutes then simmer 45 minutes. Remove bay leaves and ham hocks. Cut meat off bones of ham hocks and add back to pot. Simmer beans until creamy (2-3 hours).
Serve over rice, if desired.

Note: You can smash some beans against the side of the pot to help thicken the sauce when the beans start to soften.

Ralph's family had this as a side dish every Thanksgiving, Christmas and New Year's. Of course, it has been said for many years that if you eat black-eyed peas on New Year's you will have good luck all year.
