1 lb. chicken cutlets, cut into bite sized pieces
1 T. crushed garlic
1 red pepper, diced
4 sliced scallions
1/2 c. lite soy sauce
1/4 c. water
1/2 c. cashews

Directions:
Directions:
Spray frying pan with pam. Saute garlic until golden brown. Add chicken and cook until chicken turns white. Add soy sauce, water, peppers and scallions. Simmer for a few min. on low heat, making sure veg. are still crunchy. Sprinkle cashews over chicken.
