1 cup sugar
2 T. flour
1/2 tsp. salt
1 3/4 cup pineapple juice
2 eggs, beaten
1 T. lemon juice
1 pkg. (1-lb.) Acini De Pepe uncooked (pasta section)
3-11oz. can mandarin oranges drained
2-20oz. cans pineapple chunks, drained
1 9oz. carton cool whip, thawed
1 cup miniature marshmallows
1 cup flaked coconut (opt.)

Directions:
Directions:
Combine sugar, flour, and salt. Stir in pineapple juice and eggs. Cook stirring constantly until thickened. Add lemon juice; cool to room temperature.
Prepare Acini De Pepe according to package directions; drain. Combine egg mixture and Acini De Pepe, mix well and refrigerate overnight in airtight container. Add remaining ingredients and mix thoroughly. Refrigerate any leftovers. Makes 25 servings
