3 egg yolks, stirred
(pinch of salt only if using unsalted butter)
pinch of black pepper
2 Tablespoons lemon juice
2 sticks butter, melted separately

Directions:
Directions:
Place egg yolks, salt and pepper, and lemon juice into the blender. Give it a good spin at high speed, a couple of seconds. Place on the cover, with the small pour-in open. Continue to blend while very gradually pouring in a thin drizzle of butter droplets from 1 stick of the melted butter, just at simmering temperature.

Scrape the thick Hollandaise out into a mixing bowl. Whisk in the other stick of butter, also melted to simmering, in a very thin, slow drizzle. Keep warm until served in a bowl of hot water.
