1 pkg 6 oz stuffing mix ( I use chicken flavor)
3/4 c butter melted
3 c diced zucchini
2 c cubed chicken (optional)
1 can condensed crm of chicken
1med carrot shredded
1/2 c onions (optional)
1/2 c sour cream
Directions:
Directions:
In a large mixing bowl mix stuffing and butter. Set aside 1/2 cup for topping. Add zucchini, chicken (opt) carrots, onion and sour cream. Transfer to a greased 13x9 pan. Sprinkle with reserved stuffing topping. Bake uncovered 40-45 min. at 350. If I exclude chicken I add 2 more cups of zucchini.
