2 red onions
1 yellow onion
2 T lemon juice
1 t Dijon mustard
1 t minced garlic
1/2 T minced fresh thyme or 3/4 t dried thyme leaves
3/4 t kosher salt
1/4 t pepper
1/4 C olive oil

Directions:
Directions:
Slice off stem and carefully slice off brown part of root end. Peel, cut into wedges through the root. In lg. bowl combine: lemon juice, Dijon mustard, minced garlic, thyme, kosher salt, pepper and olive oil.

Add onions & toss well. With slotted spoon transfer to sprayed sheet pan. Save remaining dressing. Bake until remaining dressing. Bake until tender & brown. Toss 1 time during cooking. Drizzle with remaining dressing when done.

400º 30 - 45 min.
