3-4 cloves garlic
1/2 grated onion
1 grated tomato, cut in half
3/4 can tomato sauce
1 can chicken broth
1-2 tsp. chicken bouillon (powder)
4-5 zucchini, cubed
1 can of corn niblets
Monterey Jack cheese, cubed
Pepper
Vegetable oil

Directions:
Directions:
Pour vegetable oil twice around a large saucepan. Heat large saucepan over medium heat. Add garlic, onion, and tomato, and saute. Add zucchini and stir occasionally. Add tomato sauce, chicken broth, bouillon, and pepper. Add corn. Cover and boil over medium-high heat until zucchini is cooked. When finished, add cubed cheese. Cover until cheese melts.
