"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
1 (3 to 5 lb.) beef shoulder or sirloin tip roast
1 medium onion, chopped
1 pkg. Lipton onion soup mix
1 pkg. Southeastern Mills brown gravy mix
Salt
Pepper
Corn oil for frying

Directions:
Directions:
Rub salt and pepper into the roast on both sides. Heat oil in a large pot and brown the roast, searing it on all sides. Cover the roast with water and bring it to a low boil. Let the roast cook for around 2 hours, making sure enough water stays in the pot to keep the roast covered. Once the roast is tender, add the onion and enough of the soup mix and brown gravy mix to suit your taste. Continue cooking on low for an additional 30 minutes or until beef is fork tender and the gravy is to desired consistency.
