1 lb. of chicken or beef or pork
1 lb. of Velveeta Cheese
1 bag pasta of your choice
1 can of Rotel Tomatoes
1.5 oz. (3 tbsp.) Mrs. Dash Southwest Chipotle seasoning
1 large Green Pepper and Red Pepper
1 large Onion
1 oz. (2 tbsp.) Garlic Powder
1 oz. (2 tbsp.) Chili Powder
1 oz. (2 tbsp.) Paprika
2 tbsp. Vegetable Oil
1 Jalapeño Pepper (optional)
1 bag of Tortilla Chips
Cold beverage of choice

Directions:
Using the 1 lb. of meat, cut into bite size pieces. Cut green and red reppers and onion into bite size pieces, removing all the seeds and pith. If you use the jalapeño pepper, wear plastic gloves and cut into small bite size pieces. Place all peppers and onions into large bowl; add seasoning and mix well. Using the oil, cook the meat in a large skillet, until no longer pink. Add the vegetables and continue cooking for 10-20 minutes. Prepare pasta as directed on package. When noodles are ready combine, Fajita mixture, pasta, 1 can of rotel tomatoes, 1lb. of Velveeta Cheese (diced into small cubes) in a casserole dish. Bake in oven for 30 minutes at 350º or until cheese is melted. Serve with tortilla chips and enjoy with a cold beverage of your choice.
