3 c. milk
3 tbsp. butter
3 tbsp. flour
1 tsp. salt
1/2 tsp. pepper
8 oz. cheddar (mild, medium or sharp)
8 oz. monterey jack
2 c. veggies (broccoli, cauliflower, carrots - fresh or frozen)
12 oz. elbow macaroni (wheat pasta optional)
1/2 c. panko bread crumbs (optional for crispy topping)

Boil noodles and steam vegetables. Preheat oven to 350º. Make rue: melt butter on medium/low heat in skillet, whisk in flour until smooth by whisking constantly for 1 minute. Microwave milk for 1 minute. Slowly add warm milk to skillet while whisking constantly for 5 minutes, or until thick and smooth. Whisk in cheese (about 1/2 a cup at a time) until melted, whisk in salt and pepper.

Once cooked tender pour (drained) noodles and veggies into lightly greased 3 qt. baking dish. Mix together. Pour cheese sauce over noodles and veggies and mix well, evenly coating pasta throughout dish. Top with breadcrumbs. Tent with tin foil, and bake for 25-30 minutes. Remove foil and bake for 5-8 minutes or until golden and bubbly.

This is our favorite recipe because it is so yummy and our mom thinks it's a healthier version of Mac N' Cheese because there are veggies inside and she uses whole wheat pasta.
