2 sole fillets each 5 oz
1 tsp of olive oil
2 cups of chopped spinach
1 cup of shredded mozzarella cheese
1/2 cup of bread crumbs
2 tsp of minced garlic
ground pepper to taste
1/2 tsp of mayo fat free can be used
Sprinkles of papprika and parsley to top

Directions:
Directions:
Preheat oven to 400 degrees F. Lightly coat cooking dish with cooking spray or butter.
In skillet, heat the olive oil over med heat and add the spinach, bread crumbs and garlic, salt and pepper. Cook 2 to 3 min.
Place sole fillets in prepared dish. place half spinach mix in middle of each fillet and top with mozzarella cheese. Then roll up and place fillets seam side down. Bake until fish is opaque throughout when tested with tip of knife. about 8 to 10 min. Transfer to plates sprinkle with paprika and parsley and serve with lemon slice.
