1 lb of pork loin
1 tbspn olive oil
1 cup chopped onion
1/2 cup of apple
1 1/2 tbsn of fresh rosemary chopped
1 cup chicken broth ( lo sodium may be used)
1 1/2 tbsn of balsamic vinegar

Directions:
Preheat oven to 450 degrees F. Lightly grease baking pan
In large skillet heat olive oil over high heat. Add pork loin and sprinkle with black pepper. Cook until the pork loin is browned well on all sides about 3 min. Remove from heat and put in prepared pan. Roast pork for about fifteen min or until meat thermometer reads 160 degrees F (medium)
Meanwhile, add onion, apple and rosemary to the skillet. Saute over medium heat until the onion and apples are soft about 3 to 5 min. Stir in broth an vinegar and increase heat and boil until this sauce has reduced takes about five min.
To serve place pork on a large platter. Pour the apple onion mixture over the top and serve immediately.
