12 tbl. (1 1/2 sticks) unsalted butter, room temperature
1/2 cup granulated sugar
1 cup brown sugar
1 egg
2 tbl. water
1 tsp. vanilla
2/3 cup all-purpose flour
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. baking soda
3 cups quick-cooking oats
1 cup raisins or craisins

Preheat oven to 350º. Line two cookie sheets with silicone mats or parchment paper.
Cream butter and both sugars until fluffy. Add egg and beat thoroughly, then mix in water and vanilla.
In a separate bowl, sift together flour, cinnamon, salt and baking soda; add to the egg mixture and mix well. Mix in the oats and raisins. You could add a handful of chopped pecans or walnuts at this point if you like your cookies with a nutty crunch.
Use a 2 tbl. scoop to form cookies into a uniform size. Not only does it ensure even cooking, they just look more appealing when they're all the same size.
Bake for about 12 - 15 minutes, until the edges are brown and the centers look cooked. Cool on the cookie sheet for about 5 minutes, then remove to a cooling rack to finish cooling completely.
Yields approx. 28 cookies.

I took these cookies with me when I spent a week with Oliver on the set of Guy. They traveled well, arriving unbroken after 2 plane changes, and they stayed fresh until the last crumb was devoured. But the best thing about them was how happy they made everyone who took a bite! Unlike most oatmeal cookies, these are very thin and chewy, not thick and doughy.
