1 Pkg of Chicken Breast or Thighs
1/2 Head of Cabbage
2 Lime
1-2 Tomatoes
2 Tbsp Oil (vegetable or olive)
2 Tbsp Vinegar
1 Pkg 12 Count Corn Tortillas
Salt
Pepper
Garlic Powder
Salsa (optional)
Shredded Cheese (optional)
Directions:
Directions:
Season chicken to your liking. (I use Goya Adobo)
Boil chicken for about an hour or until done.
Remove chicken from pot and shred.
Slice the cabbage very thin and place into a large bowl.
Slice tomatoes and add to bowl.
Add the lime juice, oil, and vinegar.
Season with salt, pepper and garlic powder.
Mix all together until everything is evenly coated.
You may add more oil, vinegar or lime.
It's all to your liking.
Heat the corn tortillas in microwave or in a pan.
To serve, put some of shredded chicken on the tortilla.
Add cabbage slaw.
Add salsa and shredded cheese (optional).

We went to visit my husband's family in Arizona and his Uncle Al made us a huge buffet of food. He made the cabbage slaw and because I love limes I immediately fell in love with it. He made the tacos with steak (which you can also do) but we used chicken to make it a little more healthy. Hope you all enjoy it.
