1/3 C mayonnaise
2 t chili powder
1/4 t cayenne pepper
1/2 t Kosher salt
8 chicken thighs (with skin and bones—approx. 2-1/4 lbs.)
1-1/2 C breadcrumbs

Directions:
Directions:
1. In a large bowl, combine mayo, chili powder, cayenne, & salt. Add chicken & toss to coat. Cover & refrigerate minimum 2 hours or overnight. (I actually marinated for 2 days.)

2. Preheat grill to medium low. Brush grill grates with vegetable oil.

3. Place breadcrumbs in a shallow dish, add chicken, turning to thoroughly coat.

4. Grill chicken until golden brown & cooked through, approximately 20-25 minutes per side.
