1 (3 lb.) fryer cut into pieces
2 c. buttermilk
2 c. self-rising flour
McCormick's Original Chicken Seasoning spice to taste
Salt
Pepper
Corn oil for frying

Directions:
Directions:
Rinse the chicken. On a piece of wax paper, combine flour, salt, pepper and chicken seasoning. Heat about 2 cups of oil in a large, cast iron skillet on medium heat until a pinch of flour starts to sizzle when dropped in the hot oil.

Place chicken pieces in buttermilk, then roll in flour mixture until thoroughly coated. Add chicken to the hot pan and fry on 1 side for 12-15 minutes, until golden brown, and then use tongs to turn the pieces over and fry for another 10-12 minutes. The secret is NOT to turn the chicken until it is brown and crispy on the bottom side. Remove chicken from the pan and place on a rack over a cookie sheet or broiling pan for the excess oil to drain.
