3 lb. pork back bones (country-style ribs)
1 tsp. ground black pepper
2 bay leaves
1 T. salt
2 cups raw white rice

Directions:
Directions:
In a stockpot, combine the backbones, salt, pepper and bay leaves. Cover with water and bring to a boil. Cover, and cook at a low boil for 1 1/2 to 2 hours (or more) until pork is fork tender. Remove the pork to a plate. Drain the stock, keeping enough to use for cooking the rice. Cook the rice according to package directions using the stock from the pork in place of the water. When the rice is done, add desired amount of pork back to the pot of rice and mix well.

Pork can be placed in a baking dish, covered with your favorite BBQ sauce and warmed in the oven if desired.
