2 10 oz. cans enchilada sauce,divided
4 oz. cream cheese, cubed
1 1/2 c. salsa
2 c. cubed cooked chicken
1 can pinto beans (I used fat free refried beans)
1 can chopped green chilies
10 flour tortillas (6 in)
1 cup shredded Mexican cheese blend
Shredded lettuce, chopped tomatoes, onions, sour cream, and sliced ripe olives, optional

Grease a 9 x 13 in. pan and a 9 in. square pan. Using one can of enchilada sauce, spread into the bottom of the two pans. In a large saucepan, cook and stir the cream cheese and salsa over medium heat for 2-3 min. or until blended. Stir in the chicken, beans, and chilies. Place about 6 tbsp. of chicken mixture down the center of each tortilla. Roll up and place seam side down over sauce. Top with other can of enchilada sauce; sprinkle with cheese. Cover and bake at 350º for 25-30 min. or until heated through. Serve with lettuce, tomatoes, onion, sour cream, and olives if desired.
