1/3 lb. ham
2 tbsp. minced onion
1 c. shredded swiss cheese
13 oz. can of evaporated milk
5 eggs
1/2 tsp. salt
1/8 tsp. nutmeg

Directions:
Follow Pie Crust Recipe in the pie section of this book. Prepare a 9 inch single pie crust and place in a pie plate. Bake in a preheated 425º oven for 10 minutes. Cool. Reduce heat to 350 º
Dice ham and sprinkle on the bottom of the pie crust. Add the minced onion and swiss cheese.
Beat together the evaporated milk, eggs, salt and nutmeg. Pour into crust. Bake at 350 º for 35 to 40 minutes or until knife inserted in center comes out clean. Let stand 10 minute before serving.

I have made this in a 10" pie plate. Increase the eggs to 6-7 and add a little more ham, swiss and onion. Make sure to use the pie crust recipe for a 10" one crust pie.
