1 12 ounce package salt pork
1 large sweet onion ( approximately 11/2 to 2 cups), diced
3 cups celery, chopped
46 oz. clam juice
2 1/2 pounds minced clams
10-12 potatoes, peeled and diced
4 cups water
2 tsp. salt
2 tsp. pepper
3 cups water
1 cup flour
16 oz. whipping cream

Directions:
Directions:
Chop and dredge salt pork in flour and cook until crisp over medium heat. Place aside but leave grease in pan. Saute onions until clear and celery in grease from the salt pork
Place, salt pork, onions, celery, clam juice, clams, potatoes, water, salt and pepper in pot. Bring to a boil and then simmer for 1 hour or until done.
Add 3 cups of water and 1 cup flour after mixed until smooth.
Just before serving add 16 oz. whipping cream
