1 cup flour, sifted
1/2 cup sugar
3 tsp. baking powder
1/2 tsp. salt
1 cup quick rolled oats
1/2 cup pecans, chopped
1/2 cup dried cranberries, finely chopped
3 tbsp. vegetable oil
1 egg
1 cup milk

Directions:
Directions:
Sift together flour, sugar, baking powder and salt. Add rolled oats, pecans and cranberries. Add oil, egg, milk to dry ingredients until moistened. Fill prepared muffin cups 2/3 full and lest set on counter 10 minutes before placing in oven to bake. Bake at 425 degrees for 16 to 17 minutes. Bake until top springs back when lightly touched.
