1 c. Chopped Celery
1/4 c. Scallions, with tops - 1" pieces
1 Large clove garlic, minced
2 Tbls. Soy Sauce
1 Tbls. Oil
1 Tbl. Sherry
1 tsp. Finely minced fresh ginger
1/8 tsp. Sugar
1-2 lbs. Whole Mackerel

Directions:
Directions:
In a bowl combine celery, scallions, garlic, soy sauce, oil, sherry, ginger and sugar; set aside. Score both sides of fish with a knife and place in shallow baking dish. Spoon veggies over fish. Marinate about 1 hour. In a wok or large roasting pan steam fish approximately 25 minutes.

1. Orange Roughy or any fish fillets.
