1 large fryer, cut into serving pieces
salt and pepper to taste
1/2 cup flour
1/2 cup oil
1-1/2 cup water
1 medium onion, chopped
1 cup bell pepper, chopped

Directions:
Directions:
Season chicken. Dredge chicken in flour coating all sides. Fry chicken in oil, stirring occasionally until done. Pour all but 1/4 cup of the oil and chicken crumbs from the pan. Add onion and bell pepper to chicken. Pour 1-1/2 cups of water in the pan, cover and simmer for about 25 minutes, turn chicken over occasionally. Serve over rice or mashed potatoes.
