1 1/2 lbs. ground beef
grated potatoes (The goal is 50% burger 50% potatoes)
grated cheese
Iceberg lettuce sliced thin
romaine lettuce
tomatoes (optional)
salsa/hot sauce
corn tortillas

Directions:
Directions:
Brown ground beef until pink is gone. Drain and add grated potatoes. Turn heat below medium and let potatoes cook. (if mixture gets dry add a little water while cooking).

In a separate frying pan add a little bit of oil, run water over the tortilla and place in pan. cook both sides. (this creates a soft shell taco).

Put meat mixture in shell then add grated cheese, lettuce, tomatoes etc.

My mom invented this recipe because she had 8 kids and needed to extend the meat. :) It is a family favorite!

I love to freeze this mixture and have it on hand.
