22 jumbo pasta shells
1 c. cooked chicken (diced)
1 c. chopped fresh spinach
1/2 c. chopped onion (I saute onions first in little oil)
1 garlic clove, minced
8 oz. ricotta cheese
8 oz. cream cheese
3/4 c. parmesan cheese
1 egg lightly beaten
1/2 tbsp. parsley
1/2 tsp. Italian seasoning
1/4 tsp. salt and pepper
1 c. mozzarella cheese, shredded, divided
1 jar spaghetti sauce

Cook shells according to package, drain and set aside. Preheat oven to 350º. Grease 9x13 pan. In a bowl combine chicken and remaining ingredients except for mozzarella and sauce. Stir in 1/2 c. mozzarella. Spoon into cooked shells. Spread 1/2 of sauce into dish. Arrange shells on top. Top with remaining sauce. Cover with foil and bake 40 minutes. Uncover. Sprinkle rest of mozzarella and bake uncovered 5-10 minutes
