4 cups diced/peeled potatoes(Mom prefers Yukon Gold)
2 Tbsp. butter or margarine
2 cups cheddar cheese(Mom prefers it a little cheesier, so she tosses in a lil more)
1/3 cup chopped celery
1/3 cup chopped onions
3 cups chicken broth
2 cups milk
1 1/2 tsp. salt
1/4 tsp. pepper
dash of paprika

Directions:
Directions:
In a large saucepan, melt butter over medium-high heat.
Sauté celery and onions until tender.
Add potato & broth, bring to a boil.
Cover and simmer until potatoes are tender
(Mom suggests about 15 mins of simmer time)

In small batches, "slightly" mash potatoes to desired soup consistency.
Return to saucepan, stir in milk & seasonings.
Add cheese and heat until cheese is melted.
Serve and Enjoy!!
