2 c flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
3 eggs
1 1/2 c sugar
3/4 c mayonnaise
1 can crushed pineapple - any size juice & all
2 c shredded carrots
1 c walnuts or raisins (or both)

Directions:
Directions:
Grease 9 x 13 cake pan. Stir first five ingredients together. In another bowl, beat eggs, sugar, mayonnaise & pineapple until well blended. Gradually beat in flour mixture. Stir in carrots, walnuts and raisins. Bake at 350º for 50 minutes. Frost it with cream cheese icing.
