Ingredients:
Ingredients:
1 whole chicken
2 celery stalks, chopped including leaves
2 carrots, peeled and cut into pieces
6 chicken bullion cubes
1 T pepper
1 T poultry seasoning
1 T salt

Home-made egg noodles:
5 eggs
5 c flour
1 tsp salt
1/4 c olive oil

Directions:
Directions:
Rinse thawed chicken and place into large stew pot and cover with water. Add vegetables and seasonings. Bring water to a boil, then reduce to simmer for 2-3 hours or until meat drops from the bones. Take meat and bones out of liquid. Cool meat until able to remove meat from bones. Return meat to liquid and bring back to boil. Add homemade noodles ( or 1 cup dried pasta). Cook until noodles are cooked through or soft.

Mix noodle ingredients together. Add only enough water to form dough into ball. Turn dough onto well-floured board; knead until smooth and elastic, about 10 min. Divide dough into 4 equal parts. Roll dough, 1 part at a time, into a paper- thin rectangle, keeping remaining dough covered. Cut dough into 1/8 inch strips, then cut into smaller pieces. Drop into boiling soup to cook. Repeat with remaining dough.

Family favorite! Craig's family tradition is to serve thickened soup over mashed potatoes at Thanksgiving or for a hearty meal.
