1 lb. boneless chicken thighs, cut into 1 x 1 x 2 cm pieces
3 cloves garlic or 1 tsp. garlic powder
1 tsp. ground coriander
3 tbsp. sweet soy sauce
1 tbsp. vegetable oil
Salt and pepper
5 tbsp. peanut butter
5 tbsp. water

2 tsp. fried garlic (optional)
1 tsp. lime water

Directions:
Directions:
Combine garlic, coriander, soy sauce, vegetable oil, salt, and pepper to make a marinade. Mix with chicken and let marinate at least overnight.
To make peanut dipping sauce, combine the peanut butter, water, salt, sugar, fried garlic, and lime water. Mix well. Water can be adjusted according to your preference. Set aside.
Arrange chicken pieces on bamboo sticks (usually about 5-6 pieces per stick, depending on how long the stick is). Before grilling, coat the satays with a mixture of sweet soy sauce and vegetable oil, in a 1:1 ratio. Grill until they are done.
Serve with peanut sauce, steamed rice, sweet soy sauce, sliced/chopped onion, and lime.
